  1. Preheat the oven to 350 °F. Grease a 9" x 13" cake tin with cooking spray or butter.
  2. For the cinnamon filling, mix 1 cup of brown sugar and 2 teaspoons of cinnamon in a medium bowl. Then gradually add ¾ cup of flour and mix until all the ingredients are combined. Set aside.
  3. For crumb topping, add 1 cup brown sugar, ¼ teaspoon salt, 1 teaspoon cinnamon and 1 cup flour to a medium bowl. Whisk the ingredients. Then add 6 tablespoons of butter.
  4. Use your clean fingers to press the butter into the dry mixture and break it up. After you get a crumbly mixture, you can set it aside. For larger crumbs, try pressing a large handful together and breaking them into large pieces.
  5. For the cake batter, put 1 cup of butter, 1 cup of granulated sugar and ⅔ cup of brown sugar in a stand mixer. Beat ingredients on medium-high speed until fluffy and light in colour. Then add the eggs one at a time and beat the cake batter until each one is combined.
  6. Then add the vanilla extract, baking soda, and salt and blend for about 1 minute until all ingredients are incorporated. Scrape the sides of the bowl.
  7. Run the mixer at low speed. Alternately add the remaining flour and sour cream. Blend until ingredients are combined and smooth.
  8. Pour half of the cake batter you prepared into the cake mold. Then spread the cinnamon filling evenly over the dough. Spread the remaining cake batter on the cinnamon layer with a spatula. Then sprinkle the crumb topping mix.
  9. Bake the coffee cake for 40-50 minutes. Bake until a toothpick inserted in the center comes out clean.
  10. Remove the cake from the oven and transfer it to the cooling wire.
  11. Wait 5-10 minutes until the cake has cooled. Then sprinkle powdered sugar on top.

Tips

  • Be careful not to over mix the ingredients. Otherwise, the cake batter may harden.
