Sauce

  1. Mix the cornflour and dark soy until lump-free, then add the remaining sauce ingredients.

Noodle

  1. Place the sauce in a large mixing dish. Stir 2 teaspoons of the sauce into the bowl with the chicken. Toss to combine.
  2. Over high heat, heat the oil in a wok or a big, heavy-based skillet until it begins to smoke.
  3. It’s time to combine all ingredients in a bowl and start mixing them together. Stir in the onion and garlic for 30 seconds.
  4. Add the chicken and cook for 1 minute, stirring occasionally to ensure that it is white on the exterior yet still raw inside.
  5. Add the carrot and capsicum/bell peppers, then simmer for 2 minutes or until the chicken is cooked.
  6. Add noodles, sauce and some water. Mix the ingredients for 30 seconds with 2 wooden spoons. Just make sure all the ingredients are well mixed.
  7. Add the green onions, toss for another minute to coat the noodles in sauce.
  8. Your classic lo mein noodles are ready to be served. Serve garnished with green onions.
