Crust

  1. In a food processor, add graham crackers and process them until they are crumbled.
  2. Melt butter in the microwave and pour it into the food processor along with sugar and salt.
  3. Process until you get a crumbly texture and everything is well combined.
  4. Take the mixture out of the food processor onto a lightly greased 4-inch springform pan.
  5. Using the back of a spoon, press the mixture against the bottom or along the sides of the pan so that it forms a smooth surface.
  6. Place this pan in the freezer for about 30 minutes or until the filling is ready.

Cheesecake Filling

  1. In a stand mixer bowl, add heavy whipping cream. Whisk the cream at medium to high speed using a whisk attachment until it is fluffy and you see stiff peaks.
  2. Take the heavy whipped cream out of the mixer bowl and set it aside.
  3. Now, add cream cheese and confectioner's sugar in the same mixer bowl. Using a paddle attachment, start mixing the two ingredients at medium speed for about 2 minutes.
  4. You can stop the mixer to scrape the sides of the bowl and start mixing again. Once the mixture is creamy, add lemon juice and vanilla extracts and beat for 30 seconds more so that everything is well incorporated.
  5. Add the heavy whipped cream into the cream cheese mixture, and using a rubber spatula, mix the two ingredients until they are well combined.
  6. Take the cake pan out of the freezer and pour filling into it. Spread the filling evenly across the pan.
  7. Place the cake pan back in the freezer for about 3 hours or overnight or until it is set.
  8. Serve it cold with strawberries.
