Tips

  • Be sure that the eggs, butter and vinegar are at room temperature. If the ingredients are cold, it becomes difficult to achieve the fluffy and light texture of the red velvet cake.
  • Sift dry ingredients. In this way, there will be no lumps in the cake.
  • Mix the butter and sugar until you get a creamy consistency. In this mixing process, the cake dough is aerated to create a light cake texture.
  • Use butter and vegetable oil in the making of this cake. While butter adds flavor to this dessert, the oil helps to keep it moist.
  • You can use lemon juice and milk instead of buttermilk in the recipe.
  • You can choose castor sugar or icing sugar instead of granulated sugar in cream making.
  • You can use cake flour or self-raising flour instead of baking flour.
  • Do not over mix the ingredients. This can cause the cake layers to dry out.
  • Be sure to add the right amount of flour. Use a kitchen scale or measuring cup.
  • Tap the counter lightly before putting the cake tin in the oven to prevent air bubbles from forming in the dough.
  • Foam the baking soda with freshly squeezed lemon juice. In this way, you can make the cake more fluffy.
  • Do not overcook the layers. Otherwise, the cake layers will start to dry.
  • Dip a toothpick into the batter to make sure it is cooked. If the toothpick comes out clean, the sponge cakes are cooked.
  • After the cake layers have cooled, wrap the edges with cling film. In this way, the edges do not dry out. If you are going to put it in the refrigerator for cooling, be careful to wrap it in stretch film again.
