Batter (Cake)

  1. Preheat the oven at 350 °F (180 °C). Lightly grease two 9 inch (22 cm) cake pans and sprinkle it with flour.
  2. In a large mixing bowl, whisk the ½ cup of butter and 1½ cup of sugar with the help of a mixer. Continue the process until you get a creamy consistency. Then add the eggs one by one and mix until the ingredients are combined. Add the food coloring to the mixture.
  3. In a separate bowl, mix the buttermilk (or milk and lemon juice), vinegar and 2 teaspoon of vanilla until you have a smooth consistency.
  4. Sift the dry ingredients (flour, baking powder, and salt). Then add the cocoa powder to the flour mixture. Beat at low speed for 20-30 seconds.
  5. Add the flour mixture 1/3 to the mixture 3 times in total and the vinegar mixture to the mixture at the rate of 1/2 in 2 times in total. To the egg-sugar mixture, first add 1/3 of the flour mixture and 1/2 of the vinegar mixture. Then add the flour mixture and vinegar mixture again. After each addition, mix until the ingredients are combined. Finally, add the remaining portion of the floured mixture to obtain the desired consistency of the cake dough.
  6. Divide the batter evenly into the prepared cake pan. Place them evenly in the oven. Bake for about 25-30 minutes.
  7. Then turn out onto a cooling rack and let it cool. After waiting for 10 minutes, loosen the edges of the cake molds with a knife. Let it cool for at least an hour.

Frosting

  1. Whisk the cream cheese, ½ cup of butter, and 1 teaspoon ofvanilla for about 3-4 minutes until it gets a smooth consistency. When the mixture starts to turn white, add 3 cups of granulatedsugar and whisk all ingredients. If necessary, scrape the remaining ingredients on the sides of the bowl with a spatula. When it has a fluffy consistency, put it in the fridge to cool.

Assemble Cake

  1. Remove the cake layers you have kept in the freezer. With the flat side down, place the first layer of the cake on the serving platter. Spread 4 tablespoons of frosting evenly on it with the help of a spatula. Then place the second layer of sponge cake on the cream. Apply another layer of frosting on it.
  2. Serve it with cherries and pecans if you wish.
