Tacos al pastor translates to ‘shepherd style’ pork. The meat itself is marinated in a stunning blend of wonderful chilies and spices, and then slow cooked on trompo using an open flame. The spinning pork is usually topped with pineapple! The juices from the fruit give the dish an amazing sweet and tangy kick that so many people adore.

Barbacoa tacos are some of the other wonderful tacos on offer around the world. Originally, the word ‘barbacoa’ is in reference to the way that the Taino people of the Caribbean cook meat. In Mexico, however, it refers to cooking over an open flame or in a hole dug into the ground until the fatty protein is deliciously tender. The most common meats used for this taco are beef and goat.

What is a Vampiro taco?

A Vampiro taco is partway between taco and quesadilla, made up of a huge amount of deliciously melty cheese nested delightfully in between two tortillas. Beef is typically used in these tacos, and it is commonly seasoned with smoky spices to give a wonderfully earthy and hot flavor to the dish.

What is a Tripa taco?

Well, this one is a little less appetizing than some of the others on this list. Tripas are the smell intestines of farm animals, which have been cleaned, boiled, and grilled.

Typically, they’re added to tacos and then dressed with whatever condiments you might desire. A lot of the time these tacos are particularly hot, as the tripas have a very particular taste that- people may want to hide behind some chile.

What is a Cecino taco?

Cecina is beef or pork which has been salted pleasantly, before being pounded extremely thin. It is then allowed to dry a little, before being cooked. It’s quite salty and a little chewier than some other taco fillings. Interestingly, it can also be dry-cured, similarly to Italian bresaola.

What are tacos Campechanos?

Tacos campechanos are something quite incredible. Somewhat like a Mexican lasagne, they are made up of several layers of different flavors with several distinct portions of meat. The cecina that we just mentioned is typically involved in at least one of the layers.

Another layer may include pork in some way, such as a pork sausage like longaniza, or exceptionally crunchy pork chicharrones. This taco has a number of recipes online, but it somewhat down to the personal preferences of the chef - we’d recommend trying it if you’re feeling in a bold mood!
