Tips

  • Use ingredients at room temperature. The dough will be distributed uniformly if you use eggs that have reached room temperature.
  • You can use homemade or ready-made almond flour instead of almonds.
  • Measure the flour correctly. You can use a kitchen scale or measuring cup to measure the flour. Flatten the flour with the back of the knife. In this way, you can make more accurate measurements. Otherwise, too much flour can make the cookie dough tough.
  • Avoid over-mixing the ingredients. Do not mix the ingredients too much after adding the flour. Otherwise, the dough will harden.
  • Add lemon juice to the dough mixture. After mixing all the ingredients, wait for the dough to cool. Then add lemon juice to the dough mixture. This will cause the top of the cookie to crack.
  • Refrigerate the dough. After mixing the dough, shape it into a disc, wrap it in cling film, and refrigerate the dough for at least an hour, until it has completely solidified.
  • Line the baking tray with parchment paper. The parchment paper makes it easy to remove the cookies.
  • Place the cookies evenly on the baking tray. The cookies will spread as they bake.
  • Make sure you don't overcook the dough. Otherwise, the dough will harden.
  • Use almond powder to add crunch to cookies. Roast the almond powder for 5 minutes on low heat. After it has cooled, add it to the dough mixture.
  • You can use almond extract to increase the almond flavor.
  • Transfer the cookies to the cooling wire to separate them from the baking paper without falling apart.
