  1. Preheat the oven to 375 °F (190 °C). Line a baking sheet with parchment paper.
  2. Place the bagel halves on a baking sheet, cut side up.
  3. Spread about 1 tablespoon of pizza sauce on each bagel half.
  4. Sprinkle freshly grated mozzarella cheese over the sauce.
  5. Slice the pepperoni (or sausage) and bell peppers. Add them to the top.
  6. Sprinkle oregano, salt, and pepper over the toppings.
  7. Place the baking sheet in the oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.
  8. Remove it from the oven.
  9. Let the pizza bagels cool for a few minutes before serving.
  10. Garnish with fresh basil and serve them hot.

  • In a bowl, add around ½ cup of lukewarm water. Add sugar and yeast to the mixture. Mix well to combine and let the mixture sit at room temperature for 10 minutes until frothy.
  • Mix flour, salt, malt powder, and the yeast mixture in a large mixing bowl.
  • Gradually add the remaining water and knead the dough until it is smooth. This will take about 5 minutes in a stand mixer and then kneading by hand for 5 minutes additional.
  • Take a bowl and grease it with olive oil. Place the dough in the bowl and cover it with oil.
  • Cover the bowl with plastic wrap and let it rest for at least 1-1,5 hour to poof and double in size.
  • Once the dough has doubled in size, prepare the work surface by dusting it with cornmeal.
  • Let the dough out on the work surface. Divide it into 4 to 6 equal parts and roll them in balls.
  • Roll the dough balls into thick logs and connect the ends to make a bagel. Press the connected end to the work surface and roll to ensure the edges are connected and sealed.
  • Repeat the same process to other dough balls.
  • Prepare a baking sheet with parchment and dust the cornmeal over it. Place the bagels over it and let them poof for at least 2 hours to a maximum of 4 hours.
  • Prepare a new baking sheet with parchment for baking.
  • Preheat the oven to 400 °F.
  • Take a deep pot and fill it with water. Place it over medium heat.
  • Mix the honey in the water and bring it to a simmer.
  • When water is simmer, gradually add baking soda to avoid over-boiling the water.
  • Once the water starts to boil, drop 2 or 3 bagels in the water carefully. They will immediately start to float. If not, let them, poof, for an hour more.
  • Let the bagels boil for 1 to 2 minutes on each side. The more you boil, the thicker the crust and the bagel will be chewed.
  • Once the bagels are boiled, toss them hot in the sesame seeds or everything bagel seasoning. If you don't want any seasoning, then just use an egg white wash over them.
  • Place the bagels over the prepared baking sheet and bake them in the preheated oven for 20 to 25 minutes, rotating them halfway through every 10 to 12 minutes.
  • The bagels will be brown or dark brown. Take them out and transfer them to the cooling rack until completely cool.
  • Serve them plain or with cream cheese.
