In Azerbaijani Chigirtma means "screaming". While cooking in hot oil, it is believed that this is what the food is called because of the sounds made by the vegetables. There is no possibility of disliking any dish with eggplant. You can prepare a delicious starter for your loved ones with eggplant Chigirtma. Using olive oil instead of regular oil will make this dish more delicious and light.

  1. Peel the eggplant in strips along the length, make 3-4 slices lengthwise. Fry in oil. Then fry the peppers.
  2. Remove excess oil, leave a little oil in the pot.
  3. Add the tomatoes, garlic and salt on the eggplant, pepper it and place the separated oil on top. Cook for 15-20 minutes.
