  1. Firstly, put stretch film on a muffin cake mold.
  2. Remove ice cream from the freezer. With the help of an ice cream spoon or tablespoon, place the ice cream balls in the muffin mold. Put the cake tin in the freezer. Leave it in the freezer for about an hour.
  3. In a bowl, mix the sweet rice flour and sugar with a whisk. Add water and mix all the ingredients again to combine them.
  4. Cover the bowl with plastic wrap. Put it in the microwave for about a minute. Stir the ingredients again with a spatula and put them back in the microwave. After microwaving for 1 minute, remove the bowl. Repeat the stirring step and microwave for 30 seconds until the mochi dough is thick and sticky.
  5. Lay down a piece of parchment paper on the counter. Sprinkle some cornstarch on it. Put the mochi dough on the parchment paper.
  6. Dust the top of the dough with more starch. Roll out the dough into a rectangular shape (12x14inches or 30x35cm) with the rolling pin.
  7. Place the mochi dough along with the parchment paper on a baking sheet. Refrigerate the dough for 15-30 minutes to cool.
  8. After the dough has cooled, take it out of the refrigerator. Cut the dough with round cookie cutters or cups. Remove the excess corn starch with a pastry brush.
  9. Take out the ice cream balls that you have kept in the refrigerator for 1-2 hours. Place the plastic wrap on the work surface and place the dough on it. Put an ice cream scoop on each mochi dough. Cover the Mochi ice cream balls by the edges. Wrap it in stretch film.
  10. Keep the Mochi ice creams in the freezer for at least 2 hours.
  11. Before serving, leave it for 2-3 minutes at room temperature to let it soften.
  12. Unwrap the plastic wrap and serve them.

Tips
