  1. Melt butter in a 4-quart saucepan over high heat.
  2. Add sausage, cook until meat starts to brown, 4 or 5 min., stirring frequently and scraping the bottom of the pan well.
  3. Add chicken and smoked ham, continue cooking until the chicken is brown, stirring frequently and scraping the bottom of the pan as needed.
  4. ½ cup each of onion, celery and bell peppers and Cook until vegetables start to soften, about 6 to 8 min stirring and scraping pan bottom frequently. Stir in tomato sauce and cook for about one minute, stirring often.
  5. Stir in the remaining onion, celery, bell peppers and the tomatoes. Stir in stock and rice, mixing well.
  6. Bring mixture to a boil, stirring occasionally. Reduce heat and simmer, covered, over very low heat until rice is tender, about 30 minutes.
  7. Never uncover rice as it is cooking. (If you prefer to finish this dish by baking once the rice and stock have been added, transfer to an ungreased 9″x13″ baking pan and bake, uncovered at 350 °F for about 1 hour.)
  8. Serve with a salad and a crunchy French bread to make a complete meal, or serve it warm as an appetizer.

  5. Combine vegetables and proteins. Add the chicken and sausages to the rice cooker.
  6. Serve it with green onions.
