Ingredients

Directions

  1. Soak the yeast with warm milk.
  2. Preheat the oven to 356 °F (180 °C).
  3. Put the flour in a deep bowl, add the yeast, oil, salt, and a pinch of granulated sugar, soaked in the middle of the egg, and knead in the food processor. When the dough has a smooth consistency, close the lid and leave until the volume doubles.
  4. To prepare the filling ingredients, in a large bowl, combine the tahini paste, sugar, and eggs. Mix well until the ingredients are fully incorporated.
  5. Knead the fermented dough again and divide into 5 equal parts. Spread each part as widely as possible. Pour tahini-sugar mixture and roll the dough. Make a roll, starting from one end, by turning it around using a rolling pin. Do the same for all parts and arrange them in the tray. Soak again until it is twice the volume.
  6. Bake in the oven for 35-40 minutes, or until the filling is set and the top is golden brown.
  7. Remove the pie from the oven and let it cool to room temperature.
  8. Once the pie has cooled, slice it and serve it with your favorite toppings, such as whipped cream or toasted sesame seeds.

Tips

  • Use high-quality tahini. Look for tahini that is made from high-quality sesame seeds and has a smooth, creamy texture. For more, check out our 'What Is Tahini?' article.
  • Toast the sesame seeds. To enhance the nutty flavor of the tahini, toast the sesame seeds before making the tahini filling.
  • Use room-temperature ingredients. Make sure that all of your ingredients, including the tahini, eggs, and butter, are at room temperature before you begin making the filling. This will help the ingredients mix together smoothly and evenly.
  • Don't overmix the batter. Otherwise, the pie will have a dense and tough texture. Mix the ingredients until they are just combined to achieve a smooth and creamy batter.
  • Use honey or maple syrup to add sweetness.
  • Bake the pie in the center of the oven. Placing the pie in the center of the oven can help it bake more evenly and prevent the edges from burning.
  • Don't overbake. Tahini pie can easily become overbaked. This will make the pie dry and crumbly. To prevent this, check the pie frequently and remove it from the oven as soon as the filling is set but still slightly jiggly in the center.
  • Let the bun cool completely. Allow the bun to cool completely before slicing. If you try to slice it while it's still hot, the filling may be too soft and spill out.
  • Add chopped nuts, almonds, fresh berries, or a sprinkle of cinnamon for extra flavor and texture.
  • Serve with whipped cream or ice cream. A dollop of whipped cream or a scoop of vanilla ice cream can be a great addition to the pie and will help balance out the flavors.
  • To make this recipe gluten-free, look for a pre-made gluten-free pie crust or make your own with a gluten-free flour mix and vegan butter or coconut oil. Replace all-purpose flour with a gluten-free flour blend, such as almond flour, oat flour, or a gluten-free all-purpose flour mix.
