Tips

  • Use fresh or frozen blueberries. If you are using frozen blueberries, make sure they are completely thawed.
  • Use frozen butter. It is best to chill the butter in the freezer before adding it to the dough. This helps you create cake layers. Grate the frozen butter and mix it lightly with the dry ingredients.
  • Do not overmix the dough. Otherwise, the cake will be dry.
  • If the dough is too sticky, add some more flour.
  • If the dough is too dry, add 1-2 tablespoons of cream or milk.
  • Refrigerate the dough. After shaping the scone buns, refrigerate them for about 15 minutes. This will prevent the buns from spreading as they bake.
  • Preheat the baking tray. This allows the scones to swell better.
  • You can make circular or wedge-shaped scones.
