  1. Preheat a griddle pan. Brush the courgette slices with olive oil, then griddle for 2-3 minutes on each side or until tender and striped brown. Set aside.
  2. Put the tortillas on a board and spread with the hummus. Lay the courgette strips on top and scatter with the sun-dried tomatoes.
  3. Scatter the rocket on top, drizzle with the tomato oil and a squeezee of lemon juice, then add a good grinding of pepper. Fold in the sides, roll up each tightly, and cut in half.
