Griddle Courgette Wraps

Ingredients
- 4 zucchini
- 4 tablespoons of olive oil
- 4 wheat tortilla
- 12 tablespoons of hummus
- 16 sun dried tomato
- 1 arugula
- 10 drops of fresh lemon juice
- 1 pinch of black pepper
Directions
- Preheat a griddle pan. Brush the courgette slices with olive oil, then griddle for 2-3 minutes on each side or until tender and striped brown. Set aside.
- Put the tortillas on a board and spread with the hummus. Lay the courgette strips on top and scatter with the sun-dried tomatoes.
- Scatter the rocket on top, drizzle with the tomato oil and a squeezee of lemon juice, then add a good grinding of pepper. Fold in the sides, roll up each tightly, and cut in half.
