Ingredients

Directions

  1. In a pan add some butter and chopped garlic. When the garlic turns brown and becomes fragrant, then add the chopped Asparagus and saute them for a few minutes.
  2. Add chopped shallots or the small onions, and let them cook for another five minutes. Then add thin slices of cayenne pepper for a stingy and spicy taste.
  3. When the shallots seem soft and cooked, add the vegetable stock, a pinch of salt, and crush some black pepper to add the spicy flavor. And bring them to a boil.
  4. After boiling for a good 10-12 minutes, now put the flame on low. Take a small bowl and add two tbsp of cornflour and add two spoons of cold water, and make a thick paste.
  5. Add the cornflour paste to the boiling soup. This will add thickness and creaminess to your soup.
  6. Keep it stirring for a few minutes, and put off the flame once you get the right thickness. Now your soup is ready to serve.
  7. Garnish your soup with a drizzle of fresh milk cream, some parsley or basil leaves, and some chopped chives.

How To Store Asparagus Soup?

If you are planning to store the Asparagus soup, then get ready with your airtight container. You can refrigerate this soup for the next 3-4 days. Due to the presence of cream in this soup, it is frozen. But if you are making it ahead and planning to freeze the soup then do not add milk or cream in it, you can add it when you defrost and serve, and reheat it.

What Are Some Recipe Variations?

  • Asparagus soup with Chicken broth: If you are a non-veg lover, then you can add chicken broth instead of vegetable broth. This will enhance the nutritional values and the thickness.
  • Asparagus soup with a Tang of lemon: To make your soup tangy add 2 tbsp of lemon juice and some lemon rinds. When adding the lemon, you have to ditch the milk cream. To add a kick of citrus flavor, you can add a very little amount of lemon-peel shreds while garnishing.
  • Asparagus soup with Mushroom: This is a combination of mushroom and asparagus soup, as both give a creamy texture. While sauteing the Asparagus, add some button mushrooms, and follow the same recipe.
