  1. Fill up a big saucepan with water and put it on the stove to boil.
  2. Chop the pancetta finely and remove the rind first.
  3. Finely grate 50g of pecorino cheese and 50g of parmesan. Mix them together.
  4. Beat the eggs in a bowl. Add some black pepper for the seasoning and set everything aside.
  5. Add 1 tsp salt to the boiling water. Add 350 g spaghetti and cook at a constant simmer for 10 minutes until the spaghetti is cooked.
  6. Put 2 garlic cloves on a knife and press it down hard to squash them.
  7. While the spaghetti cooks, fry the pancetta in a pan with garlic. Now add 50g of unsalted butter into a large frying pan. Once the butter is melted, add the garlic and pancetta.
  8. Cook them on medium heat for about 5 minutes (stirring often) until the pancetta becomes golden and crispy. You can now remove the garlic with a spoon since the garlic has now imparted its flavor.
  9. Keep pancetta on low heat. When the pasta is done, remove it from the boiling water with a pasta fork or tongs and add it to the frying pan with the pancetta. And don't throw away spaghetti water.
  10. Put most of the cheese in with the eggs. Save a little bit to add on top later.
  11. Remove the pan of spaghetti and pancetta from the heat. Pour in the eggs and cheese immediately while they're still hot. Use tongs or a long fork to lift up the spaghetti so it gets mixed with the eggs.
  12. You can now add the extra pasta cooking water so it becomes saucy and lastly, add a bit of salt to season it
  13. Use a long-pronged fork to take the pasta out of the pot. Put it on your serving dish or bowl and sprinkle it with cheese. If the dish gets too dry, add more pasta water and then grate some black pepper on top.
  14. Serve it with fresh parsley.
