  1. Cut off the ends of each plantain. With a sharp knife, cut the skins of the plantains lengthwise from top to bottom.
  2. Then slice the green bananas into 1 inch thick pieces.
  3. Add water and salt to a large bowl. Stir the ingredients until the salt dissolves. Then add the sliced plantains to the bowl and place it in a large bowl and stir in the salt until it dissolves. Add the sliced plantains and soak in salted water for about 10 minutes. Drain thoroughly and pat dry with a paper towel.
  4. Heat canola oil in a large skillet over medium heat. Add the sliced plantains to the pan in batches. Fry for 4-5 minutes on each side until softened and golden-brown.
  5. Then, transfer the fried slices to a towel-paper-lined plate with the help of tongs. Take the pan off the stove.
  6. Gently press down on green bananas with a Tostonera press, plate, or serving spoon.
  7. Bring the pan to medium-high heat, adding more oil if needed. Then return the plantains to the hot skillet and fry each side for about 2 minutes until crispy.
  8. Transfer the fried tostones to a paper towel-lined plate or cooling rack to remove excess oil. Season fried mashed plantains with salt.
  9. Serve hot.

Tips

  • Use unripe green plantains. The yellow and ripe ones are sweet and tender.
  • Do not use normal bananas instead of plantains. If you use bananas, they will dissipate more quickly. Plantains do not disperse easily due to their high starch content.
  • Do not slice plantains too thin. Cut them into medium-thick slices. This way, it will be crispy on the outside and soft on the inside.
  • Avoid overfilling the pan. Otherwise, green bananas will not cook evenly.
  • Use high temperature-resistant oil. Choose vegetable oils such as olive oil, canola oil, grapeseed oil, sunflower or sesame oil.
  • Make sure the oil is hot. Fry green cooking bananas in batches. In this way, you can preserve the heat of the oil.
  • Use a kitchen thermometer to measure the temperature of the oil. Make sure the oil stays at 190 °C (375 °F). If you don't have a thermometer, add a small piece of the banana to the oil and if it starts to crackle, the oil is ready.
