  1. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add peppers and onion and season with salt and pepper. Cook for 5 minutes or until soft and transfer to a plate.
  2. Heat a tablespoon of vegetable oil over medium-high heat. Season chicken with spices, salt, and pepper and cook, stirring occasionally, for about 8 minutes or until golden and cooked through. Transfer to a plate.
  3. Add a flour tortilla to the skillet and top half of the tortilla with a heavy sprinkling of both kinds of cheese, the cooked chicken mixture, the pepper-onion mixture, a few slices of avocado, and some green onions. Fold the other half of the tortilla over and cook, flipping once, until golden (approximately 3 minutes per side).
  4. Repeat this process to make other quesadillas, slice into wedges and serve with sour cream.
