Homemade Turkish Pastry Buns

  1. Mix 1 glass of warm milk with 1 glass of warm water.
  2. Put the yeast into the kneading bowl. Add 1 glass of warm milk, sugar, and salt to it and let it sit for 10 minutes. Let your yeast be activated.
  3. Then add the remaining milk and water mixture to the kneading bowl.
  4. Add the egg whites, olive oil and butter at room temperature and mix.
  5. Gradually add flour. By kneading it, get a dough that is not too stiff, soft like an earlobe. You can add flour controlled and add more flour if needed. Knead the dough for 5 minutes. Have a smooth dough.
  6. When the kneading process is over, cover it with a cloth and ferment it for another 35-40 minutes.
  7. Your dough will double in size. Uncover it and let it breathe. Then cut it into small pieces. If you make it the size of a tangerine, you'll get about 22 buns. You can make the size of the buns larger or smaller as desired.
  8. Mix 2 egg yolks with 1 tablespoon of oil and 1 tablespoon of milk.
  9. Put greaseproof paper in a tray and place the pastries evenly on the tray. Apply the mixture you made with the egg yolk on the pastries with the help of a brush.
  10. Leave the pastries on the tray for 35-40 minutes and wait for them to ferment. In the meantime, preheat your oven at 356°F.
  11. Bake in the preheated oven for 25-30 minutes, until golden brown. Cooking time may vary depending on the oven.

Tips

  • You will get better results if you sift your flour beforehand.
  • If you want your dough to ferment faster, preheat your oven at 212°F and turn it off. Let the dough stand at this temperature.
  • Our pastries are plain in this recipe. If you want to experiment with different ingredients, you can prepare delicious fillings with cheese, potatoes or minced meat and put them in the pastries.
  • You can put sesame or black seed on your pastry.
  • Make sure that all ingredients are at room temperature. Do not forget to take the eggs and butter out of the refrigerator a while before you use them.
  • Use lukewarm milk and water to make the pastry softer.
  • Use granulated sugar. That way, the dough will rise better.

Which Yeast is Used in Pastry?
