Tips

  • You will get better results if you sift your flour beforehand.
  • If you want your dough to ferment faster, preheat your oven at 212°F and turn it off. Let the dough stand at this temperature.
  • Our pastries are plain in this recipe. If you want to experiment with different ingredients, you can prepare delicious fillings with cheese, potatoes or minced meat and put them in the pastries.
  • You can put sesame or black seed on your pastry.
  • Make sure that all ingredients are at room temperature. Do not forget to take the eggs and butter out of the refrigerator a while before you use them.
  • Use lukewarm milk and water to make the pastry softer.
  • Use granulated sugar. That way, the dough will rise better.
  • Knead the dough well. Get a homogeneous consistency.
  • After kneading the dough, let it rest. Cover the dough with a cotton cloth and let it sit at room temperature for 45-60 minutes.
  • After resting the dough, knead it for another 1-2 minutes before shaping. That way, the pastries will be softer.
  • If you want to put filling ingredients such as potatoes and cheese into the pastry, prepare the filling beforehand. You should add it to the dough after the filling cools down so that the consistency of the dough does not deteriorate.
  • To make the buns puffier, place the dough on a baking tray and leave it at room temperature for 10 minutes. Meanwhile, the dough will continue to rise.
  • Place them on the baking tray evenly spaced so that the pastries do not stick together. The pastries will swell and spread while cooking.

  1. Mix 1 glass of warm milk with 1 glass of warm water.
  2. Put the yeast into the kneading bowl. Add 1 glass of warm milk, sugar, and salt to it and let it sit for 10 minutes. Let your yeast be activated.
  3. Then add the remaining milk and water mixture to the kneading bowl.
  4. Add the egg whites, olive oil and butter at room temperature and mix.
  5. Gradually add flour. By kneading it, get a dough that is not too stiff, soft like an earlobe. You can add flour controlled and add more flour if needed. Knead the dough for 5 minutes. Have a smooth dough.
  6. When the kneading process is over, cover it with a cloth and ferment it for another 35-40 minutes.
  7. Your dough will double in size. Uncover it and let it breathe. Then cut it into small pieces. If you make it the size of a tangerine, you'll get about 22 buns. You can make the size of the buns larger or smaller as desired.
  8. Mix 2 egg yolks with 1 tablespoon of oil and 1 tablespoon of milk.
  9. Put greaseproof paper in a tray and place the pastries evenly on the tray. Apply the mixture you made with the egg yolk on the pastries with the help of a brush.
  10. Leave the pastries on the tray for 35-40 minutes and wait for them to ferment. In the meantime, preheat your oven at 356°F.
  11. Bake in the preheated oven for 25-30 minutes, until golden brown. Cooking time may vary depending on the oven.

Which Yeast is Used in Pastry?

Three types of yeast can be used for making pastry: Fresh yeast, dry yeast and instant yeast. You can use these yeasts interchangeably in pastry recipes. For example, you can use 20 grams of dry yeast or 14 grams of instant yeast instead of 40 grams of fresh yeast in our Turkish Pastry Buns recipe. Among these yeasts, instant yeast is not expected to be activated. It can be added directly to flour mortar.

How is Dough Leavened?

The first thing you need to pay attention to when making dough is that the ingredients are at room temperature. Ingredients such as oil and milk should be warm. If you are using wet or dry yeast, first mix the yeast with the oil and sugar in a bowl. After waiting for 15 minutes, add it to the flour mixture.
