  1. Preheat the oven to 374°F with the top and bottom heaters on.
  2. Add 2/3 of the olive oil, yogurt, lemon juice, lemon zest to a mixing bowl in a water glass, and then mix.
  3. In another bowl, mix gluten-free flour, gluten-free oats and brown sugar and add to the mixture with yogurt.
  4. Then knead the mixture until it has a soft consistency.
  5. Then, when the dough becomes thick, shape it in a round form.
  6. Mix 1 coconut and 1 lemon.
  7. Dip the cookies in the coconut and lemon mix and place them on a baking sheet with greaseproof paper.
  8. Cook for 10-15 minutes until golden.
  9. Let it cool and eat with pleasure.
