  • Use good quality gluten-free flour.
  • You can use any type of gluten-free flour, such as almond flour, oat flour, or wheat flour.
  • If you have a nut allergy, instead of almond flour, you can use a flour mixture made from oat flour, sweet rice flour, and tapioca flour.
  • Measure the flour correctly. You can use a kitchen scale or measuring cup to measure the flour. Flatten the flour with the back of the knife. In this way, you can make more accurate measurements. Otherwise, too much flour can cause the cookie dough to become tough.
  • Use ingredients at room temperature. To bring egg, butter, and milk-based ingredients to room temperature, let them sit at room temperature for at least one hour before using them. In this way, the dough will have an even texture.
  • Use fresh lemon juice or lemon zest. This gives the cookie an intense lemon flavor.
  • Adjust the amount of lemon flavoring to your taste. For a lighter lemon flavor, you can reduce the amount of lemon juice and lemon zest.
  • Line the baking tray with parchment paper. The parchment paper makes it easy to remove the cookies.
  • Place the cookies evenly on the baking tray. The cookies will spread as they bake.
  • Do not overcook the cookies. Gluten-free cookies bake faster than regular cookies. Check constantly while the cookies are baking.
  • Allow the cookies to cool completely before serving. This allows the cookies to harden. Otherwise, it can easily fall apart.
