Tips

  • Use bone-in, skin-on thighs or boneless, skinless chicken breasts. Bone-in chicken meat stays moist and juicy. Skinless chicken cooks quickly and evenly. It can be sliced into pieces easily.
  • Use seedless grapes. Choose ripe and sweet grapes.
  • Before roasting the grapes, mix them with a little olive oil and salt. This will help them caramelize and bring out their sweetness.
  • Season the chicken with salt, pepper, and other herbs or seasonings before cooking.
  • Use a nonstick or cast iron skillet to cook the chicken. This will help prevent sticking and allow the chicken to brown evenly.
  • Do not overcook the chicken. To check if the chicken is fully cooked, tap the center of the breast with a fork. You can also use a meat thermometer to check the internal temperature of the meat. Meat should have an internal temperature of 165 °F (74 °C).
  • Let the chicken rest before slicing. This ensures that the chicken's juice is evenly distributed.
