Ingredients
- 1 cup of quinoa
- 2 tomato
- 1 onion
- 5 scallion
- 5 green pepper
- 5 sprigs of arugula
- 9 sprigs of parsley
- 5 tablespoons of olive oil
- 1/2 lemon
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1/2 pomegranate
Directions
- Put 2 cups of hot water in the pot and boil.Add the quinoa, cook it over low heat until it is absorbed.
- Finely chop the onion, scallion, green pepper, arugula and parsley. Cut the tomatoes into cubes. When the quinoa cools, add the vegetables, olive oil, lemon juice, salt and pepper and mix. Serve with pomegranate.
