  1. Preheat the grill over medium-high heat.
  2. Wash zucchinis and cut into long-thick strips ½ inch thick.
  3. In a large bowl, mix olive oil, lemon juice, Italian seasoning, paprika and garlic powder. Flavour with salt and blackpepper.
  4. Then dip the chopped zucchini in the oil mixture. Put zucchini on the grill with the help of tongs. Cover the grill and cook for 3 minutes. Then turn zucchinis and cook again for another 3 minutes.
  5. When the zucchini is tender, remove from the grill. Serve with lemon juice and fresh basil.

Tips

  • Skin of the zucchini is edible. Therefore, there is no need to peel before cooking. You can peel them if you wish.
  • Peel the skins of zucchini into thin strips with a vegetable peeler. Do not peel off all the shells.
