  1. Heat the stock in a saucepan and let it simmer.
  2. Heat a frying pan and melt the butter in it. Add the diced onions and mushrooms and keep on sauteing those in medium to high flame until a golden-brown color is achieved.
  3. Add the rice to it and keep on stirring. Mix all of them well.
  4. Then, add the white wine or brandy. And wait till it boils for around 4 minutes. The liquid will get reduced to half of its volume.
  5. Start adding stocks to it. Only add half a cup of stock to it at a time. Keep on stirring it constantly so that the rice does not stick to the ages of the pan. Continuous stirring will make the rice release the starch and give the preparation its creamy texture.
  6. Do not add any stock until the previously added quantity gets completely absorbed. The whole process will take around 20-25 minutes. In the end, the rice will be completely cooked.
  7. Add the grated parmesan cheese to it. Stir and mix well. Then add the salt according to the taste and also the grounded black pepper. Again mix well.
  8. Sprinkle the chopped parsley and serve it hot.
