  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the chopped onion, garlic, and minced meat to the pot. Continue cooking, stirring occasionally, until browned.
  3. Then drain the excess fat from the beef in the pot.
  4. Add the tomatoes, peppers, broth, and tomato puree to the mixture in the pot. Season the soup with salt, pepper, and other seasonings. Stir well to ensure all the spices are mixed together, and then cover the pot.
  5. Boil the entire mixture for 30 minutes, stirring occasionally.
  6. Add the corn and beans to the pot. Cook the mixture on low heat for 10–12 minutes.
  7. Add lemon juice and coriander. Stir in the cilantro to wilt a little.
  8. Serve hot with any sauce of your choice.

Tips

  • Drain and rinse the beans. Canned beans are stored in brine. So be sure to wash the beans to reduce the salt level in the soup.
