  1. Preheat the oven to 350 ˚F.
  2. Peel and slice the tomatoes. Drain the sliced tomatoes using a colander.
  3. Then lay a paper towel on a baking sheet and arrange the tomato slices in a single layer. Sprinkle salt on the tomatoes and place a paper towel on them. Wait for 10 minutes. This step draws in some of the moisture from the tomatoes and prevents the pie skin from becoming moist during the baking process.
  4. Remove excess moisture from the tomato slices using a paper towel, a clean dish towel, or a potato grater.
  5. After lightly drying the tomatoes using a paper towel, place the tomatoes, basil, and onion inside the pre-baked pie crust. Season the filling with salt and pepper.
  6. Combine the grated cheeses (except Parmesan) and mayonnaise. Spread this cheese mixture over the tomatoes in the pie mold and finish by sprinkling a generous amount of Parmesan cheese on top.
  7. Bake the pie in the preheated oven for thirty minutes, or until lightly browned. Let the pie cool for at least fifteen minutes before cutting and serving.
  8. Slice and serve it.
