  1. Cut a cup of unsalted butter into tablespoon-sized pieces. Put it on a plate and freeze it until ready to use.
  2. In a medium saucepan, bring the white wine, vinegar, and shallots to a boil over high heat.
  3. When it starts to boil, cook the mixture over medium-high heat for about 5 minutes, until it reduces by 2 tablespoons.
  4. Then add the cream, salt, and white pepper and boil for 1 more minute.
  5. Add the butter cubes to the sauce and continue whisking over low heat until the butter melts. Gradually add the remaining pieces of butter. Whisk constantly until the sauce has the consistency of hollandaise or coats the back of a spoon.
  6. Remove the sauce from the heat and add the lemon juice and mix.
  7. Strain the sauce through a strainer or sieve. For a smooth, buttery sauce, remove the shallots with the help of a strainer.
  8. Flavor the sauce with fresh herbs and spices.
  9. Serve it hot.
