Tips

  • Use cold butter.
  • You can replace white wine vinegar with champagne vinegar or lemon juice.
  • You can also use salted butter instead of unsalted butter. This makes the sauce a little thicker.
  • If using salted butter, taste the sauce before adding salt to it.
  • Stir constantly until the ingredients are well combined. Add the butter to the sauce in several batches. Continue mixing until it is completely melted.
  • Cook the sauce on low heat. Take it off the stove when it thickens. Otherwise, it may separate if it gets too hot.
  • If the sauce is cut off, remove it from the heat and let the sauce cool. Then add some water and whisk the sauce mixture again.
  • If you don't prefer any dark color in this butter sauce, opt for white pepper instead of black pepper.

Ingredients

Directions

  1. Cut a cup of unsalted butter into tablespoon-sized pieces. Put it on a plate and freeze it until ready to use.
  2. In a medium saucepan, bring the white wine, vinegar, and shallots to a boil over high heat.
  3. When it starts to boil, cook the mixture over medium-high heat for about 5 minutes, until it reduces by 2 tablespoons.
  4. Then add the cream, salt, and white pepper and boil for 1 more minute.
  5. Add the butter cubes to the sauce and continue whisking over low heat until the butter melts. Gradually add the remaining pieces of butter. Whisk constantly until the sauce has the consistency of hollandaise or coats the back of a spoon.
  6. Remove the sauce from the heat and add the lemon juice and mix.
  7. Strain the sauce through a strainer or sieve. For a smooth, buttery sauce, remove the shallots with the help of a strainer.
  8. Flavor the sauce with fresh herbs and spices.
  9. Serve it hot.
