  1. Preheat the oven to 350 ˚F (175 ˚C).
  2. Crack two eggs in a large bowl and whisk well until no whites remain. Add the sugar and vanilla extract. Mix well until the sugar is completely dissolved.
  3. Grate the zucchini. Pat the zucchini dry with a paper towel to remove excess water.
  4. Add the melted butter and shredded zucchini to the mixture. Mix all the ingredients thoroughly.
  5. In a separate bowl, add flour, baking powder, baking soda, cinnamon, ground ginger, nutmeg, and salt. Mix dry ingredients with a whisk or fork.
  6. Combine dry and wet ingredients in a mixing bowl with the help of a spatula.
  7. Add walnuts, raisins or cranberries to the mixture. Fold in all the ingredients.
  8. Grease the muffin tin or line it with parchment paper.
  9. Using a spoon, pour an equal amount of muffin batter into each mold. Do not fill the molds completely.
  10. Bake muffins in the preheated oven until golden brown, about 25 minutes.
  11. After removing the muffins from the oven, transfer them to the wire rack and leave them to cool for 5 minutes.
  12. Then remove the muffins from the molds. Serve it hot or at room temperature.

Tips
