  1. Place the ricotta in a fine-mesh strainer set over a large bowl to drain. Allow to drain for at least an hour and up to overnight in the refrigerator.
  2. Take heavy cream and ¼ cup powdered sugar and whisk them in a large mixing utensil until firm peaks form.
  3. Then combine ricotta, mascarpone, ¼ cup powdered sugar, vanilla, orange zest, and salt in a separate large mixing bowl. Whip up the cream and fold it in. Refrigerate for at least 1 hour before filling the cannoli.
  4. Combine flour, sugar, salt, and cinnamon in a large mixing bowl. Using your hands or a pastry cutter, cut the butter into the flour mixture until it is pea-sized.
  5. Mix in the wine and egg until a dough forms. To help the dough come together, knead it a few times in the bowl.
  6. Refrigerate for at least 1 hour and up to overnight after patting into a flat circle with plastic wrap.
  7. Divide the dough in half on a lightly floured surface. One half should be rolled out to a thickness of 18 inches. To cut out the dough, use a 4 round cookie cutter. Repeat with the rest of the dough. Cut a couple more circles by rerolling scraps.
  8. Brush egg whites where the dough will meet to seal it together after wrapping it around the cannoli shapes.
  9. Heat about 2 spoons of oil in a big pot over medium heat to 360°. Working in batches, drop cannoli molds into the oil and cook until golden brown, about 4 minutes.
  10. Remove from the oil and place on a plate lined with paper towels. Allow to cool slightly before serving.
  11. In case of air frying, Place molds in an air fryer basket in batches and cook at 350° for 12 minutes, or until golden.
  12. Fill a pastry bag with the filling and an open star tip. Fill shells with filling, then dip the ends in small chocolate chips.
  13. Serve it with powdered sugar.

  • You can prepare the fillings in advance two days ahead of making cannoli. It's a nice way to save your time with preparation.
  • When creating the dough, make sure your butter is extremely cold and your frying oil is heated to 360 °F.
  • If your oil temperature is lower than that, the shells will take considerably longer to fry, soaking up more oil and becoming softer and less crisp. If the temperature is too high, the shells may be burned on the outside.
  • Cold butter will help give your shells layers, resulting in crispy, flaky shells! After creating your dough, chill it for at least 1 hour, but longer is best, so the butter is nice and cold again before rolling it out.
  • Shells can be kept unfilled for one day in an airtight container, but the filling should be done right before serving. After about an hour, the filled cannoli will become soggy.
  • You can also air fry cannoli to give it a perfect crispy pastry, it will also help reduce the excessive oil.

What Is Cannoli?

Cannoli are one of the most well-known and well-loved Sicilian delicacies. They are pastry dough tube-shaped shells filled with ricotta and made of flour, cocoa, coffee, sugar, and butter. A metal cannoli mold is used to mold the shells into hollow tubes. Ricotta and the confectioner's sugar make up the filling.

A cannoli is a type of pastry that originated on Sicily's island. Cannoli are Italian pastries made up of tube-shaped shells of fried pastry dough filled with a sweet, creamy filling, typically ricotta. They come in sizes ranging from 9 to 20 cm. They are often known as cannoli Siciliani in the mainland of Italy. A perfect partner for your morning tea.

If you wish to add more flavor to the filling, then you can spice it up with some more cinnamon powder, some diced maraschino cherries, a few drops of vanilla extract, and some orange zest. Finish by dipping the ends in crunchy pistachios, if desired. In fact, lemon zest can be replaced with orange zest, lime zest, or chopped candied citron.

How To Make Cannoli?

It's vital to load cannoli just a few minutes before eating them to get the best refreshing flavor. Otherwise, the ricotta filling may cause the shell to get soggy and lose its crispiness. It is essential to use sheep ricotta for the filling.

1. Dough

In a mixing basin, combine the dry ingredients. Using a pastry cutter or a fork, cut butter into the dough. With a wooden spoon, combine the egg and wine. To pull everything together, add extra wine. Knead a shaggy ball for a few moments. Follow the resting and frying instructions.

2. Cream

The filling for cannolis is always made with ricotta and is generally sweetened with powdered sugar. For a lighter filling, mascarpone and whipped cream are commonly used. For added taste, you can add orange zest or nutmeg.

3. Filling

Ricotta should be strained. In a mixing bowl, combine the ricotta, sugar, chocolate chips, and cinnamon. To combine the ingredients, fold them together and stir them together.

What To Serve with Cannoli?

  • Cannoli chips or Nachos can be a great option to serve with Cannoli.
  • Fresh Strawberry Iced Tea can be a great choice.
  • Waffle cones or sugar cones are also one great option to be served with cannolis.
  • French Toast also adds up to the taste.
  • You can also have dishes like pizza or sandwiches for a change.
