  1. Put the chicken into a big bowl and add all the marinade ingredients along with salt and pepper. Massage the chicken thighs thoroughly with the marinades.
  2. Take a plastic wrap and wrap the bowl tightly. Put it in the refrigerator for 3 hours minimum.
  3. For the pitta bread, take a bowl. Add the white bread flour, dried yeast, sugar, and ½ tsp salt. Mix them well.
  4. Pour 150 ml of water together with 2 teaspoons of olive oil into a bowl. Make a good dough and wrap the dough with kitchen foil. Let rest until doubled.
  5. Once done, cut the dough into 4 equal pieces. Roll it out into thin circles. Then again put them in oiled cling film for 15-20 minutes.
  6. It’s time to make the tzatziki. Cut the cucumber in halves lengthwise and take out all the seeds. Then chop it into fine slices and mix them along with the yogurt, mint, garlic, and lemon juice. Let the mixture chill in the freeze.
  7. Preheat a grill or griddle pan on a high heat. Take a roasting tin and put foil paper on its surface.
  8. Take 4 metal skewers and thread the chicken thighs onto the metal skewers. 1 metal skewer can hold up to 3 chicken thighs. Put the skewers into the griller carefully. Line the roasting tin underneath.
  9. Take a big pan and heat over medium-high flame. Brush some oil on the surface of the bread. Put them on the pan one at a time. Let it sizzle for 1-2 minutes on the surface and once bubbles appear on one side, flip the bread and let it cook for another 2-3 minutes until it is golden brown. Keep your bread warm until eating them.
  10. Meanwhile, don’t forget to cook your chicken thighs alternately, turning them for 5-7 minutes gaps.
  11. Now put the chicken thighs under the grill. Cook for 15-20 minutes while brushing them with oil and the leftover juice on the roasting tin. Keep turning it occasionally to spread the same flavor all over the chicken.
  12. Once your chicken thighs are perfectly cooked, remove them from the oven and let them sit for 5 minutes.
  13. It’s time to serve your perfect chicken souvlaki. Take a plate and put the pitta bread first. Then cut the chicken thighs from 1 skewer into four kebab size pieces. Top it with lettuce, tomato, red onion slices, and the delicious tzatziki.
