Chicken Tikka

  1. In a large mixing bowl add the chicken, plain yogurt, turmeric, 2 tablespoons of garam masala, fresh lemon juice, ginger powder and mix well.
  2. Cover and put in the fridge for 2 hours minimum. Overnight is best.
  3. Remove chicken from marinade and place onto a baking sheet with a rack.
  4. Heat oven to 350 degrees and cook chicken until it reaches an internal temperature of 155 degrees

Masala

  1. In a large pot over medium to medium-high heat, add in ghee or oil and allow to heat.
  2. Add in onion, garlic and garam masala and allow to sweat and become fragrant.
  3. Stir in the ginger powder and the tomato paste and cook for 2 minutes
  4. Add in paprika and the crushed tomatoes and allow to reduce until thick.
  5. Add in cream and simmer for 2-3 minutes
  6. Add in water and stir for 2-3 minutes before adding in salt and sugar.
  7. Add chicken to pot and cook until the chicken is fully cooked. Serve with rice and naan bread.

Tips

  • Try to only partially cook the chicken in the oven. This will cause it to not be over cooked when you add it to the sauce, so it can soak up some of the flavor.
  • Take your time when adding ingredients to the sauce as it cooks. Each time you add an ingredient, give it time to cook out and release all of its flavors.
