  • To keep the wontons from falling apart, keep their fillings small and avoid big wontons. A good measure, in this case, is 1 teaspoon of filling for each wonton.
  • To keep the wontons from falling apart in the soup, steam them first and then place them in the broth. Steaming also prevents the wontons from overcooking.
  • Peanut oil is the recommended choice of oil for cooking wontons as it doesn’t burn easily. However, vegetable oils like canola and corn oil are fine too.
  • To make the wontons stick together, wet the edges of the wrapper by dipping your fingers in water and then moistening the wrapper. Next, fold the wrapper into a triangle shape and press to remove any air bubbles and seal it well.

Next, put all broth ingredients - 3 cups chicken broth, 2 garlic cloves, 2 tablespoon light soy sauce, 2 teaspoon sugar, 2 tablespoon Chinese cooking wine, ½ teaspoon sesame oil - in a pan over high heat. Bring it to a simmer and then reduce the heat to medium. Simmer for 5-10 minutes, then remove garlic and ginger and transfer to bowls.
  5. Boil water in a pot and put the wontons in it for about 4 minutes. Take them out once they start to float and add to the soup bowls.
