  1. Place all the filling ingredients mentioned above in a bowl and mash them to make a perfectly smooth mixture. You may leave the prawns in chunk form rather than crushing them completely.
  2. Lay down the wonton wrappers and fill in the filling, about 1-2 teaspoons for each wonton. Wet the edges of the wonton with water and wrap it around the filling, pressing out all the air.
  3. Place the wontons in a lid as you work through the soup to prevent the wontons from drying out.
  4. Next, put all broth ingredients - 3 cups chicken broth, 2 garlic cloves, 2 tablespoon light soy sauce, 2 teaspoon sugar, 2 tablespoon Chinese cooking wine, ½ teaspoon sesame oil - in a pan over high heat. Bring it to a simmer and then reduce the heat to medium. Simmer for 5-10 minutes, then remove garlic and ginger and transfer to bowls.
  5. Boil water in a pot and put the wontons in it for about 4 minutes. Take them out once they start to float and add to the soup bowls.

  • Wontons might get damaged if you freeze them. If there is some leftover, and you want to freeze it, keep the wontons in a tray or a pan where they are not touching each other to make sure they don't stick and lose shape. Put this tray in the freezer, and once frozen, transfer it to a plastic bag for storage.
