  • Make sure to squeeze the juices from the zucchinis as much as possible. After grating the zucchini, salt it. Then squeeze with a kitchen towel to remove any excess water. Otherwise, the fritters will be moist.
  • Grate the zucchini. You can use a grater or a food processor for this. It is best to grate the zucchini for this recipe.
