Tips

  • Make sure to squeeze the juices from the zucchinis as much as possible. After grating the zucchini, salt it. Then squeeze with a kitchen towel to remove any excess water. Otherwise, the fritters will be moist.
  • Grate the zucchini. You can use a grater or a food processor for this. It is best to grate the zucchini for this recipe.
  • Wash and peel the zucchini.
  • Preheat the pan. Preheat the pan while preparing the batter. If the oil is hot, the fritters may burn. If the oil is cold, the mucver may absorb too much oil.
  • Check the temperature of the oil. The ideal temperature of the oil for frying the mustard should be 350 °F (175 °C). Use an instant-read thermometer to check the temperature of the oil.
  • Heat the oil well so the fritters do not suck in too much oil.
  • The fritters cook fast so make sure you are watching them, and turning them once they get brown.
  • If you leave the mix in refrigerator over night, the fritters will taste better.
  • Do not overfill the pan. Otherwise, the mutton will not cook evenly.
  • Use almond flour, chickpea flour, rice flour, or any gluten-free flour to make the recipe gluten-free.
  • Do not overmix the batter. As you mix the flour into the batter, the gluten will loosen. This causes the muffins to absorb excess oil and become wet.
  • If the batter is too runny, add a little more flour. If it is too thick, add some cold water or milk.
  • Add cold water to the batter. In this way, the mucver does not absorb too much oil and becomes crispy.
  • Use flaxseed eggs instead of eggs to make the recipe vegan. Skip the cheese or use vegan cheese.
  • You can serve it with fresh herbs such as green onions and parsley, or with ingredients such as sour cream and bacon.
