  1. Thinly slice the garlic. Peel and grate the ginger.
  2. In a large pan, heat the oil over medium heat.
  3. Sauté the sliced onion, garlic and ginger with the oil.
  4. Cook for about 5 minutes. Add a cup of vegetable stock over it. Mix them.
  5. Then add the remaining vegetable stock and soy sauce.
  6. Slice the mushrooms and add to the mixture.
  7. Mix all the ingredients and cook for about 1 hour on medium-low heat.
  8. Boil hot water to prepare the noodles.
  9. In a separate pot, fill with hot water. Add the noodles.
  10. Cook the noodles until they get al dente consistency for an average of 10 minutes.
  11. Filter the water with the help of a strainer.
  12. Put the noodles in a bowl. Add the vegetable mixture you have prepared on it.
  13. Serve bowl of ramen with scallions, jalapeño pepper or greens.
