  1. Peel and dice all the vegetables.
  2. Heat 1 tablespoon of olive oil and butter in a large saucepan. Add the onion, carrot, and celery and sauté for about 5 minutes on medium-high heat until the onions are translucent. Add the garlic and sauté for 1-2 minutes. Then add the flour and cook for 1 more minute.
  3. On the low heat, add the chicken, chicken stock, salt, pepper, cayenne pepper, and thyme. Add more seasonings to taste. Add the cornstarch to the milk and whisk together before adding it to the pot. Boil the soup.
  4. Then add the bay leaf. Cook all ingredients until the chicken is cooked through, 10–12 minutes. Add the spinach and gnocchi. Cook the soup for about 5 more minutes over medium-low heat. Remove the bay leaf.
  5. Serve hot with grated parmesan cheese.
