  1. Preheat the oven to 400 °F (200 °C). Line a large baking tray with parchment paper.
  2. Cut the florets and stem of the cauliflower into equal-sized pieces. Place it on the baking tray. Coat with 2 tablespoons of olive oil. Season with salt and pepper to taste.Bake for about 15 minutes, until the cauliflower is tender and the edges are caramelized.
  3. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large saucepan over medium heat. Add the onion and garlic and sauté for about 5 minutes until the onions are soft or translucent.
  4. Remove the roasted cauliflower from the baking sheet. Reserve a few pieces of cauliflower for serving. Then add the cauliflower and vegetable broth. Season well with salt, pepper, and thyme. Cover the pot and bring it to a boil over high heat.
  5. Turn the stove down. Cook over medium-low heat for another 15 minutes until the cauliflower is tender.
  6. Take the saucepan off the heat and add the lemon juice. Allow the soup to cool for a few minutes.
  7. Drain the cauliflower with the help of a colander and reserve the cooking liquid.
  8. With the help of a food processor or blender, blend the cauliflower until smooth. Add the cooking liquid. Adjust the consistency of the soup to your preference.
  9. Taste the soup. Season with salt and pepper to taste.
  10. Put the soup in 4 bowls. Garnish with roasted cauliflower florets and thyme leaves.
  11. Serve them hot.
