  1. Preheat the oven 425 degrees Fahrenheit. In the meantime, use two tablespoons of olive oil to grease a baking dish and set it aside.
  2. Use a sharp knife to slice the two chicken breasts in half lengthwise to get four chicken fillets. Then pound the fillets to an even thickness as per your preference.
  3. Add the panko breadcrumbs, Parmesan, garlic powder, oregano, salt and pepper to a flat bowl and combine. Whisk the egg in a separate small bowl.
  4. Start coating the chicken fillets by dipping them first in the egg mixture and then in the breadcrumb mixture. Take care to coat all sides well and place the coated fillets on the greased baking sheet.
  5. Place the baking sheet in the oven and bake for 15 minutes. Then take it out, flip the chicken, and top each fillet with 3-4 tablespoons of marinara sauce and a handful (or one slice) of mozzarella cheese.
  6. Return the baking sheet to the oven and bake for an additional 5 to 7 minutes, or until the cheese is melted and chicken cooked through. Broil for 2-3 minutes or cook until the cheese gets golden browned and enjoy your homemade crispy baked chicken Parmesan.

    • Juicy chicken breasts give the best results when it comes to Chicken Parmigiana, but you can also use chicken thighs if you are worried about overcooking.
    • Pound your chicken fillets with the smooth side of the meat mallet to tenderize the chicken and ensure even cooking.
    • When breading, use one hand for the bread crumb mixture and one hand for the eggs. This makes the entire process much cleaner and quicker.
    • The olive oil plays a big role in developing that crunchy crust crispy, chicken Parmesan is known for, but you can also use a different oil like canola or sunflower.
    • Panko bread crumbs are dryer and flakier than regular breadcrumbs and absorb less oil, making them the secret to perfectly crunchy Parmesan chicken.
    • Parmesan chicken is just not the same without some rich and nutty parmesan cheese. But if you really need to substitute it, you can use Piave, Dry jack, Romano cheese instead.
    • The egg is necessary to make the breadcrumbs stick to the chicken, so be sure to cover all sides of the fillets with egg thoroughly.
    • You can use either homemade or store-bought Marinara sauce for this recipe. If in a pinch, use tomato sauce mixed with some water as a substitute for Marinara sauce.
    • Both shredded and fresh mozzarella work equally well for this recipe, although the shredded cheese is generally easier and quicker to melt.
