  1. Preheat the oven 425 degrees Fahrenheit. In the meantime, use two tablespoons of olive oil to grease a baking dish and set it aside.
  2. Use a sharp knife to slice the two chicken breasts in half lengthwise to get four chicken fillets. Then pound the fillets to an even thickness as per your preference.
  3. Add the panko breadcrumbs, Parmesan, garlic powder, oregano, salt and pepper to a flat bowl and combine. Whisk the egg in a separate small bowl.
  4. Start coating the chicken fillets by dipping them first in the egg mixture and then in the breadcrumb mixture. Take care to coat all sides well and place the coated fillets on the greased baking sheet.
  5. Place the baking sheet in the oven and bake for 15 minutes. Then take it out, flip the chicken, and top each fillet with 3-4 tablespoons of marinara sauce and a handful (or one slice) of mozzarella cheese.
  6. Return the baking sheet to the oven and bake for an additional 5 to 7 minutes, or until the cheese is melted and chicken cooked through. Broil for 2-3 minutes or cook until the cheese gets golden browned and enjoy your homemade crispy baked chicken Parmesan.
