  1. In a food processor, combine the chichpeas, spinach,garlic, lemon juice and zest, and tahini. Process on low for 1 minute to combine the ingredients.
  2. With the processor on high, drizzle in the oil. For a thinner consistency, gradually add cold water, 1 tablespoon at a time, until the desired texture is achieved. Add salt and pepper to taste.
  3. Transfer to a serving bowl and garnish with chia seeds, sprouts, and microgreens. Serve immediately.
