  1. First, boil the baby potatoes in salted water for about 6 minutes and then let it cool.
  2. Preheat the oven to 374 °F (190 °C). Line a baking sheet with parchment paper.
  3. Clean and fillet the branzino fish. Pat dry the sea bass with paper towel.
  4. Then cut the fennel leaves roughly, cut the tomatoes in half, crush the olives and remove the seeds.
