Tips

  • The rice should not be short-grained. It has a stickiness to it that might ruin the consistency of your dish. Use only the Basmati rice or Jasmine rice while making this dish.
  • The dish must not contain any bone from the chicken. Make sure to use only the fleshy part of the chicken. Chicken breast is definitely the best choice but you can also use the chicken thighs after proper deboning.
  • The rice can soak up the water content quickly making your fried rice dry. In that case, cook your rice with chicken broth. This will provide the perfect moisture to the recipe.

Ingredients

Directions

  1. Take a casserole pot and combine the rice and water together. Cook the rice for 25-30 minutes over 400 °F.
  2. Once the rice gets fluffy, take it out from the oven and let it sit aside to cool off.
  3. Take a skillet and cook the chicken in oil until it is golden and cooked through. Season the chicken with salt and pepper according to your taste.
  4. Transfer the chicken to a plate and add butter to the skillet. Once the butter is melted, add in the carrots and saute them on medium-high heat. Once fully cooked, put them with the chicken.
  5. Add some more butter to the skillet and once melted, add the eggs. Stir them to scramble.
  6. Add the cooked chicken and carrots back into the skillet. Then add in the garlic. Mix well until combined.
  7. Add in the rice slowly and keep stirring until everything is mixed very well.
  8. Take a small bowl and combine all the ingredients for the sauce. Add the sauce into the skillet and sprinkle the green onions over it. Cook everything for another 2-3 minutes.
  9. Serve warm with Sriracha.

What is the Best Rice for Fried Rice?

Short grain rice makes your fried rice somewhat sticky as it has more stickiness whereas long-grain rice has less stickiness. That is why long grain rice like Basmati rice and medium grain rice like Jasmine rice is perfect for the fried rice recipe.

Can I Make it with Cauliflower?

Of course, you can. Cauliflower is probably the best replacement for rice in this dish. It is low in carbohydrates and the appearance is quite similar to rice. So, it will definitely be a smart choice if you make this recipe using cauliflower instead of rice.

Can I Substitute Chicken Thighs?

You can substitute chicken breasts with chicken thighs. Though you have to put a little extra effort into this. As you know, chicken thighs are not boneless, so you will have to follow the proper procedure to debone and fillet the chicken thighs before using them in your cuisine.
