  1. Mix cornstarch with ½ cup of chicken stock. Stir them in a saucepan until the cornstarch dissolves.
  2. Bring the remaining chicken stock to a boil over high heat in a medium saucepan.
  3. Add the cornstarch slurry to the chicken stock mixture and cook over low heat.
  4. Beat the eggs in a bowl. Slowly add the beaten eggs to the stock mixture. While adding the eggs, stir the soup in one direction with a whisk or fork. The egg will spread out into ribbons.
  5. Then add the ginger, soy sauce, salt, white pepper and chili flakes to the pot.
  6. Turn off the stove. Take the soup in a bowl and garnish with a few chopped green onions.
  7. Serve it hot.
