  1. Place each of the steaks between two plastic wraps. Beat the steak until very thin. As you strike, turn the steak frequently to make sure you are beating evenly. Beat steaks with a meat hammer until you have quarter-inch thick steaks.
  2. Sprinkle some salt on the meat and preheat the oven to 200 °F. Put a wire rack on a baking sheet and put it in the oven. You'll use the oven to keep the steak warm while you cook the rest.
  3. Take my two debts. Beat eggs and milk together. In the second, whisk together the flour, salt, garlic powder, and paprika. Dip one steak at a time into the flour mixture, pressing the steak into it. Lift the steaks, shake off the excess, and dip the steaks in the egg mixture, making sure to coat both sides. Finally, lift the steak from the egg wash and dip it in flour a second time. Put the steaks on a paper towel lined plate.
  4. In a large frying pan, add the oil so that it completely covers the bottom with a layer of at least half an inch. Heat the oil to 350 °F. You can roughly measure it by adding some flour or seeing if it sizzles when you add the handle of a wooden spoon. Working with one steak at a time, put each steak in the oil. Use a metal spoon to put some oil on top of the steak.
  5. Fry the steak for about 2 minutes on each side, until you see the edges of the steak beginning to turn golden. Being very careful, turn the steak over in the pan and fry for another two minutes. When both sides are completely golden, drain off the excess fat from the steak and transfer it to the baking sheet. Repeat with the remaining steaks and then move on to the sauce.
  6. To make the gravy sauce, add the oil and flour to the bowl. Whisk the flour. Cook the mixture for 4-5 minutes on medium-low heat, stirring constantly. Slowly add the milk and cream until the mixture has a smooth consistency. Stir the sauce constantly. The sauce will clump at first, but will loosen as you add more liquid. Season with salt and pepper to taste.
  7. Pour the sauce over the fried chicken steak. Serve it hot.

Tips

  • Pound the steak thin. You can thin the meat with a meat mallet or get finely ground meat from the butcher. This way, the chicken steak cooks faster.
  • Dip the steaks well in flour. After dipping in the egg, flour the steaks again with the sole of your hand.
  • Check the temperature of the oil. Add some flour to the pan. If the oil sizzles, the oil is hot. Fat that is too cold will soak the steak deeply, giving it an unpleasant consistency. Too hot oil will burn the outside of the steak before the inside is properly cooked.
  • Adjust the seasonings you use in your flour mixture. You can have lemon pepper, thyme, or your favorite seasonings.
