  1. Drain and wash the boiled chickpeas, then put them in a large mixing bowl.
  2. Blend the apple, celery, and carrot in a food processor.
  3. Pulse until all the pieces are broken up into large bits.
  4. Add the chickpeas, radish, mayonnaise, salt, and pepper and break up but NOT pureed. You want some chunky pieces to remain.
  5. Transfer the chickpea salad to a large bowl.
  6. Toss in the capers and stir into salad (you don't want to pulse the capers in with the other ingredients because it looks and tastes a more pleasant whole).
  7. Toast the bread.
  8. Put a few spoonfuls of salad between the slices of bread and top it with fresh greens.
